Our drinks selection always has a surprise or two in store. One highlight is our alternative pairing for guests who prefer not to drink alcohol. Almost all of the six or seven drinks are homemade – from cucumber and verjuice lemonade to water kefir with orange and ginger. So far, alcohol-removed wines often lack something rather essential: flavour.
Our alcoholic pairing is not always about wine, either. A dark beer paired with aquavit from Copenhagen becomes our “Carte blanche Gedeck” alongside a course featuring kale. Or perhaps a sparkling apple wine with a dessert of basil, apple, tarragon and pine nuts. Whether it is a classic Bordeaux, Barolo or a Grosses Gewächs, or a natural wine we import ourselves from a small family producer in Crete – if we love it, it belongs here. Classics and underdogs sit side by side, each appreciated in its own right.
